We’ve eaten the cookies at their current East End Market location, we’ve tried their hot cookie hour, and we’ve waited and watched all of the construction going on at their Disney Springs location. You could say we’re just a little excited for Gideon’s Bakehouse to open in Disney Springs!

And, while we’ve gotten some indications of special treats that will be available at this spot when they open later this year, now we’ve gotten a first look at the menu items that will be ready for all of us to munch on very soon!

With the Disney Springs location set to open before the end of the year (with some fantastic holiday cookies!), Gideon’s Bakehouse is now starting to share a peek at the menu that will be available at this location via their Instagram (@gideonsbakehouse).

For the past few days, Gideon’s has been announcing one cookie each day that will be on the menu at their Disney Springs spot, and now we’re bringing them all to you!

So far, here are the cookies that Gideon’s has announced will be on their Disney Springs menu:

1. Original Chocolate Chip

First up is Gideon’s Original Chocolate Chip cookie! According to their Instagram post, the cookie actually took the creator of Gideon’s Bakehouse a whole 15 YEARS to perfect. That’s some serious cookie dedication!

The cookie is almost 1/2 pound and is packed with multiple chocolate chips, but it’s also got a vanilla punch from the cookie as they use real vanilla bean. YUM.

2. Pistachio Toffee Chocolate Chip

Next up, we’ve got the Pistachio Toffee Chocolate Chip! This cookie has a mix of chocolate chips and crunchy toffee pieces, as well as lightly salted pistachios.

It’s a mix of sweet and salty flavors, and soft and crunchy textures. For those who grab a cookie and have to follow it up with a potato chip, followed by another cookie, this sounds like it might be the perfect creation!

3. Cookies & Cream

Also on the Disney Springs menu will be Gideon’s Cookies & Cream cookie! This creation is made up of a soft vanilla cookie with chunks of Double Stuff Oreos inside and crushed Oreos outside. Gideon’s describes this as a Cookies & Cream milkshake in a cookie.

We actually got to try this cookie earlier this year at their East End Market location. If we absolutely had to pick a least favorite out of the several cookies we tried that day, it would probably be this cookie. We’d probably prefer to eat the regular chocolate chip or triple chocolate over this one. If you LOVE classic cookies and cream flavors though, Gideon’s Cookies & Cream cookie may be worth a try for you!

4. Peanut Butter Crunch

Gideon’s has also shared that their Peanut Butter Crunch cookie will also be available at their Disney Springs location. The Peanut Butter Crunch is described as being entirely peanut buttery with every bite, and the dough is actually made of mostly peanut putter! The cookie is topped with Gideon’s handmade candied peanuts for some great crunch!

Gideon’s also shared that the cookie would pair perfectly with PB Buttercream Dips which will also be available on occasion at their new Bakehouse!

5. Triple Chocolate Cookie

Looking for MORE chocolatey goodness? Then you’ll want to check out Gideon’s Triple Chocolate Cookie when it becomes available at their Disney Springs location. This cookie actually features 5 different kinds of chocolates, including Callebaut and Ghiradelli chocolates, AND Gideon’s chocolate ganache is poured STRAIGHT into the cookie dough as its mixed!

We got to taste this one at their East End Market location and it is definitely dense but delicious! The salt on the cookie is INCREDIBLE, but you’ll probably want to grab a glass of milk to pair with this treat. It’s extremely rich, so you might only be able to eat a little bit at a time (but that means you could save some for later and savor it over a longer period of time).

6. Coffee Cake Cookie

Drum roll please! The final cookie announcement is a Gideon’s favorite! The mighty Coffee Cake Cookie is great for any sweet tooth who can’t decide between cake and cookie, so you just combine them into one EPIC treat!

One of the most BELOVED cookie flavors, the Coffee Cake Cookie is a once-a-year treat at the original Gideon’s Bakehouse, but we’re THRILLED to see it’s going to be available daily at Disney Springs! This buttery behemoth is a vanilla bean cookie filled with cinnamon strudel and topped with homemade double baked butter crumbs! Naturally, it pairs perfectly with a cup of coffee, especially Gideon’s Cold Brew!
